This Frito Pie Casserole is so easy and SOOO good!!! We made this the other night and we both LOVED it! We both said this would be perfect for a tailgate. Hamburger, onion, beans, enchilada sauce and cheese topped with Fritos – heaven in a pan! We ate way too much of this. It was so good that we we couldn’t stop eating it!! YUM!
We ate this for dinner, but it would be perfect for a potluck too. We are having some people over to watch football this weekend and this is definitely going on the menu! This is comfort food at its best. Perfect to warm you up on a cool fall/winter night!
- 1 lb ground beef
- 2 Tbsp dried minced onion flakes
- 2 (15oz) cans Ranch Style Beans
- 2 (10oz) cans enchilada sauce
- 1 (9.75oz) bag Fritos
- 2 cups shredded cheddar cheese
- chopped green onions
Preheat oven to 350 degrees. Spray a 9×13-inch pan with cooking spray. Set aside.
In a large skillet, cook ground beef until no longer pink. Drain fat. Return meat to pan. Stir in onion flakes, beans and enchilada sauce.
Pour half of Fritos into prepared pan. Top with meat mixture. Sprinkle cheese over meat mixture. Top with remaining chips.
Bake for 25 to 30 minutes. Sprinkle with chopped green onions.
