Crock Pot Hamburger Potato Casserole

Serves: 4 to 6 servings
  • 2 pounds ground beef, fried & drained
  • 1 large onion, sliced thin
  • 6 medium potatoes, washed & sliced
  • 1½ cups sliced carrots
  • 1 can kidney beans (drained)
  • 2 cans cream of mushroom soup
  • ½ to ¾ cup beef broth or stock
  • 1 cup shredded cheddar cheese
  1. Mix the cream soups and the beef stock/broth in a separate canister and set aside
  2. Layer the ingredients listed above in the following order:
  3. Ground beef, onion, carrots, beans, and lastly the potatoes
  4. Pour the soup mixture over the top and cover and cook for 8 to 10 hours
  5. minutes before serving, top it with cheese. Cover and allow to melt.
