Slow Cooker Cardamom Rice Pudding Fresh Peaches

It’s rare when I make dessert on slow cooker, but it’s so worth it! This cardamom rice pudding fresh peaches is incredible! Check out how I make it.

You’ll Need:

1 cup of uncooked jasmine or basmati rice.
½ tsp of kosher salt.
1 (2 inch) cinnamon stick.
3 sliced peaches.
8 cups of 1% low fat milk.
¾ cup plus 2 tbsps of sugar, divided.
½ tsp of ground cardamom.
1 vanilla bean split lengthwise.
⅛ tsp of ground cinnamon.

How to:

In a 6 quart electric slow cooker coated with cooking spray, mix the milk, rice, ¾ cup of sugar, kosher salt, ground cardamom, cinnamon stick and vanilla bean (through vanilla bean).

Cook covered on low for 7 ½ hours.

Scrape seeds from vanilla bean and discard vanilla bean shell and cinnamon stick.

Mix in 2 tbsps of sugar and serve witch peach slices and ground cinnamon on the top.
