My family and I lived in the South my entire life. As a result, we ate a lot of Southern-style dishes. Now, don’t confuse what I’m saying here. I loved my childhood, I never went hungry, and I wouldn’t change anything for the world. After I graduated from high school, the college that I was going to was North. My parents were so sad to see me go, but I was ready to move onto bigger and better things in my life. It was so exciting and a bit surreal when I first headed out.

After I met a few friends and gained a little confidence in my surroundings, I decided that it was going to be time to venture out into the business district. My friend and I decided that we would go try one of the little Italian restaurants down the street from our school. I ordered spaghetti, thinking traditional tomato sauce pasta, but it was so different!

Now that I am married with children, I get to make this for my family at home. It always brings back great memories of college and the time when I met my husband, which was very close to the day that we ate at that Italian restaurant. We sit around and tell stories and devour this yummy pasta. I like to serve it with a crispy green salad and bread sticks to really fill everyone up. I have also doubled the recipe for potlucks and social events and it always goes over really well.

This was a spaghetti that was just like this recipe from All Recipes. It was amazing to say the least. Later that year, I learned how to make it myself. It was so much cheaper and I could alter it to suit my tastes. My roommates thought I was the coolest kid in the dorm after having a bite of this dish.
