A beloved favorite recipe that’s been around awhile. While the crushed tortilla chips are optional, I personally love the crunch.
My husband, kids, and myself all packed in the car for a short road trip to stay with my parents for a few days over a holiday weekend. They had been asking us to come for a while, but we hadn’t been able to find the time. So, of course, when I called and told them that we were coming, they could hardly contain their excitement. I was ready to see them, I wasn’t ready for the car ride though. The kids are at that age where they ask “Are we there yet?” about every ten minutes.
After about three or four times of that I’ve had enough. Thankfully, they took a nap for most of it this time. We got pretty lucky. We were even luckier when we walked in the door and saw that Mom had dinner coming out of the oven. It smelled terrific. She had Mexican stuffed shells just like this recipe from Group Recipes.
I didn’t even unpack the car. We just sat down and ate right away. There were no stops on the way there because the kids were asleep so we were famished. This definitely did the trick!
