Ingredients
700g cold mashed potatoes, about three large potatoes
2 shallots (scallions) thinly sliced
1 cup tasty cheddar cheese, grated
½ cup of parmesan cheese, grated
3 large eggs, separated
¼ cup full cream milk
¼ cup melted butter
2 tablespoons fresh thyme leaves or 2 teaspoons dried thyme leaves
1 teaspoon onion powder
1 teaspoon fine salt
½ teaspoon fine white pepper
How to prepare
Step 1:
Preheat the oven to 430 degrees Fahrenheit on bake, not fan, and lightly butter a 12 cup normal sized muffin tin. Then place all ingredients except the egg whites in a large bowl and mix thoroughly.
Step 2:
In a separate bowl beat egg whites till stiff and airy, fold a quarter of the whites into the mixture, and fold through the mixture to slacken it.
Step 3:
Gently fold remaining whites into the mixture and spoon into the muffin tin. Allow to bake on the middle shelf for 20-25 minutes or until golden.
Step 4:
Remove from the heat. Serve and enjoy!
