HOMEMADE SALSA

I picked 37 lbs of Health Kick Roma tomatoes today so its time for

HOMEMADE SALSA

6 tomatoes diced
2 jalapenos diced
1 medium white onion diced
½ a medium red onion diced
1/2 cup cilantro or parsley diced
5 cloves garlic chopped
3 limes juice
1 tbsp cumin
1 tsp sea salt
1 tsp chili powder
1 cup pan fried corn
3 tbsps of pineapple juice
1 6oz can of pineapple tidbits or any cut up fruit of your choice.
2 tbsp EVOO

Saute corn in olive oil remove, place in mixing bowl let cool
Chop all ingredients, add to cooled corn, mix together, store in glass jar in fridge

OPT: Add some diced fruit of your choice- pineapple, mango, peach etc for a little sweetness.
