HOMEMADE KENTUCKY BLACKBERRY COBBLER

We have blackberry bushes in our backyard and every year we have copious amounts of blackberries – I love it! This blackberry cobbler is one of my favorite ways to use the blackberries and the family doesn’t complain either! I always freeze what I cannot use so if I use blackberries I have frozen, I let them thaw before using.

Ingredients:

2 1/2 cup blackberries, washed
1 cup sugar
1 cup flour
2 tsp. baking powder
1 cup milk
1/2 cup salted butter, melted

Directions:

Stir together just the berries and sugar in a large bowl and let it sit out for 25-30 minutes.

Preheat oven to 375 degrees Fahrenheit.

Stir together the flour, baking powder, and milk with a wooden spoon.

Next, stir in the melted butter and hand-mix it until the ingredients are well incorporated and you have few clumps.

Pour batter into medium baking dish (buttered) and smooth it out.

Finally, pour the blackberries on top with all the sugar included and evenly distribute it over the batter.

Bake for 45 minutes to an hour, depending on how golden you prefer it to be. Let it cool for 5 minutes so it will hold its shape.

Top with a scoop of vanilla ice cream if desired!
