2 whole large egg
4 large egg white
2 tbsp green onion, chopped
1⁄4 tsp salt
1⁄8 tsp black pepper
1⁄8 tsp hot pepper sauce, or to taste
1⁄2 cup cooked lean ham, diced
1⁄4 cup parmesan cheese
Whisk together eggs, egg whites, green onion, salt, black pepper, and hot sauce in a large bowl.
Spray a nonstick skillet with cooking spray and place it over medium heat. Pour in the egg mixture, then tilt the skillet so the bottom is completely covered. Cook for 3 to 5 minutes or until the eggs are almost set. Occasionally lift the cooked egg, so any uncooked egg can move to the edges of the skillet. Sprinkle with ham and parmesan cheese. Loosen the edges of the omelet and gently fold it in half. Cook for 1 more minute or until heated through.
